Delicious Egg Stuffed Peppers
These aren’t your usual stuffed peppers! Eggs are the star of this meal, complemented by fresh chives, turkey, spinach and cheddar cheese. A unique way to use up that leftover turkey!
Preheat oven to 350°F (175°C).
Slice peppers in half lengthwise and clean out seeds. Coat peppers with olive oil and place cut side up in an 8 x 8-inch (20 x 20 cm) baking pan.
In a medium bowl, whisk together eggs, milk, chives, salt and pepper. Stir in turkey, spinach and ¼ cup (60 mL) of the cheese.
Divide mixture between peppers and top with remaining cheese. Bake for 30 to 35 minutes until cheese is melted and peppers are tender. Broil on high for a few seconds for extra golden tops. Garnish with additional chives.
Tip: If you don’t have leftovers, you can buy a small boneless, skinless turkey breast. Season well, then sear in a cast iron pan for 3 minutes on either side—Bake in 350°F (175°C) for about 30 minutes or until cooked through. Let rest before chopping. Freeze extra meat to use later.
Tip: If the turkey is not your cup of tea, substitute chicken or For a veggie option, use tofu instead.
